Ingredients:
- 3 grams of matcha
- 2 eggs
- 2 1/2 cups of flour
- 1 tsp of vanilla extract
- 1 tsp of baking powder
- 1/2 cup of butter
- 1 cup of coconut sugar
Preparation:
- In a bowl, blend the sugar and butter together. Once they are well combined, add the vanilla extract and eggs. Mix thoroughly.
- In a separate bowl, combine the flour, baking powder and matcha.
- Using a strainer, gradually add the dry mixture to the wet mixture. Combine until a smooth and bright green dough is formed.
- Cover the dough and refrigerate for 30 minutes. Then, remove from the refrigerator, flatten it, and cut out your desired cookie shapes. Preheat the oven to 360° F
- Place the cookies in the preheated oven and bake for approximately 15 minutes or until they are fully cooked. Be mindful as these cookies tend to bake quickly!
- Optional: Enhance the cookies by drizzling melted white chocolate and topping them with sliced almonds.
